Zero Carb Doritos Locos Tacos Tortillas!


Think of all the wonderful things you can put into a tortilla. Meat, cheese, different types of meat, with different types of cheeses… The list goes on.

I have always loved a good taco, and tortillas have found their way into our way of eating on a regular basis. We use them for tacos, pizza, and even hamburger buns. We make quesadillas, calzones, and we’ve even tried some desserts! The only thing I don’t like about a standard “low carb” tortilla is that they are not only processed, but they also have tons of what I call “mystery fiber” to get the net carb count low. This means I’m usually stressing about the carb content. Additionally, they typically don’t have the amount of fat content that you’d like to see when eating a keto lifestyle.

Not to mention, have you ever had the Doritos Locos Tacos from Taco Bell? Ridiculous… I mean, they’re amazing! Especially the Cool Ranch variety! With a little ranch seasoning we can make something just as good!

Through our journeys, we have come across a way of making tortillas that has cured all of those woes! Why not just take a handful of cheese, bake it until it’s golden brown, then stuff it with all the normal taco fixins’? Well we’re doing just that! Here’s the recipe!

Keto taco shell recipe:


1/4 cup shredded cheese of your choice!

Ranch seasoning.

That’s pretty much it…

Preheat your oven to 400 degrees.

Line your cookie sheet with a silicone baking mat, or some parchment paper. Silicone baking mats working amazingly!

Take your 1/4 cup of cheese and spread it out evenly. It should be a thin layer, but you don’t want to be able to see much of the sheet underneath.

Bake for 8-10 minutes. Keep an eye on the tortillas. The cheese should melt and then turn a golden brown. You don’t want to cook them for too long!

Take them out of the oven and either drape them over something (we use a rolling pin), or fold them in half so they retain a good shape.

Sprinkle with ranch seasoning to your liking. A little goes a long way in this case.

Fill with your favorite taco stuff and enjoy!

In this case we used pepper jack. It worked great and gives a nice little kick. We have also used a Mexican cheese blend, cheddar, and cheddar jack all with the same awesome results!

These baking mats are an absolute life saver, and I recommend them to anyone who is eating a keto lifestyle. Nothing ever sticks to them!

I topped these with some lettuce and salsa. I’m pretty boring when it comes to my tacos. Even so, these are absolutely delicious!
